Serves 2
 
2 thick-cut pork chops
2 tbsp olive oil
2 cloves garlic, minced
1 tsp smoked paprika
½ tsp ground cumin
Salt and freshly ground black pepper
 
Apple Chutney
2 Granny Smith apples, peeled and diced
1 small onion, finely chopped
2 tbsp apple cider vinegar
2 tbsp brown sugar
½ tsp grated fresh ginger
¼ tsp cinnamon
Pinch of chilli flakes
Salt to taste
 
Avocado Salad
1 ripe avacado, sliced
Mixed salad leaves
8 cherry tomatoes, halved
¼ cucumber, diced
¼ red onion, thinly sliced
Fresh mint leaves
Fresh parsley or chives (optional)
 
Dressing
3 tbsp extra virgin olive oil
1 tbsp lemon juice
1 tsp Dijon mustard
1 tsp honey
Salt and black pepper
 
Turmeric & Harissa Sprinkle
1 tsp turmeric
1 tsp harissa seasoning
½ tsp smoked paprika
 
 Make the Apple Chutney
Place the apples, onion, vinegar, brown sugar, ginger, cinnamon and chilli flakes into a saucepan.
Simmer gently for 20-25 minutes until thick, soft and jam-like.
Season with a pinch of salt and allow to cool slightly.
 
Grill the Pork
Mix olive oil, garlic, smoked paprika, cumin, salt and pepper.
Rub all over the pork chops.
Grill over medium-high heat for 5-6 minutes per side (depending on thickness) until caramelised and cooked through.
Rest for 5 minutes before serving.
 
 Prepare the Salad
Toss the salad leaves, avocado, cucumber, cherry tomatoes and red onion together.
Whisk the dressing ingredients and drizzle over just before serving.
 
Lightly dust Turmeric-Harissa Sprinkle around the rim of the plate and over the pork 
 
To Plate
Gather 2 large plates
Arrange the avocado salad in the centre of a large black or preferred plate.
Place the grilled pork chop on top.
Spoon a generous dollop of warm apple chutney over the pork.
Garnish with fresh mint leaves.
Finish with the turmeric-harissa sprinkle around the plate and a drizzle of extra virgin olive oil.
 
Paul's tip – this work well with warm crusty bread or roasted new seasonal potatoes.
